Egg bites with a mix of cheddar and feta cheese, spinach, and red bell pepper that are tasty and full of protein. Great for a quick and healthy breakfast!
Ingredients: 4 large eggs. 1/2 cup shredded cheddar cheese. 1/4 cup feta cheese, crumbled. 1 cup fresh spinach, chopped. 1/4 cup red bell pepper, finely diced. 1/4 cup milk. Salt and pepper to taste.
Instructions: Whisk the eggs and milk together in a bowl until they are well mixed. Salt and pepper to taste. Add the spinach, red bell pepper, cheddar cheese, and feta cheese. Do a thorough mix. Grease the egg bite molds with oil or cooking spray. Fill up each mold about two thirds of the way to the top with the egg mixture. Put the trivet inside the Instant Pot and add one cup of water. With care, put the egg bite molds that have been filled on the trivet in the Instant Pot. Place the lid on top of the Instant Pot and seal the valve. Cook for 8 minutes on high pressure. After you're done, let the pressure drop naturally for 5 minutes. Then, manually release any pressure that is still there. Remove the egg bite molds from the Instant Pot with care and let them cool for a few minutes. Take the egg bites out of the molds carefully and serve them hot. If you want, you can add more shredded cheese and chopped spinach as a garnish before serving.
