Yellow shakshuka! I was losing the will to make any more omelettes and eggs are a cost effective way to feed the family (and get the veggies in) so this shakshuka was a great lunch alternative. Sauté onions and yellow peppers in a pan with olive oil until soft, add ground cumin, coriander, harissa paste or ground spice blend, garlic and turmeric. Stir well until veggies are softened. Add a tin of tomatoes and simmer for ten minutes before making little wells, cracking in an egg and covering with a lid for a couple of minutes.
