This Paleo-friendly recipe combines the goodness of sweet potatoes, eggs, and avocado for a nutritious and satisfying meal. Perfect for breakfast, brunch, or even a light dinner.
Ingredients: 2 large sweet potatoes, sliced into rounds. 4 eggs. 1 avocado, sliced. 1 tablespoon olive oil. Salt and pepper to taste. Fresh herbs for garnish optional.
Instructions: Set oven temperature to 400F 200C. Arrange the sweet potato rounds on a parchment paper-lined baking sheet. Add a drizzle of olive oil and season with pepper and salt. Bake sweet potatoes for 15 to 20 minutes, or until they are soft and beginning to crisp up around the edges. Take out of the oven and press a tiny well in the middle of each round of sweet potato. Poke a hole in each egg. Add some salt and pepper to the eggs. Place the baking sheet back in the oven and continue baking for ten to twelve more minutes, or until the eggs are cooked to the desired consistency. Take out of the oven, then, if desired, top each sweet potato round with sliced avocado and fresh herbs. Serve right away.
