A quick note about temperature
Have you ever had a cup of coffee that tasted sour or very bitter? Incorrect brewing temperatures may be to blame.
While there are a lot (24) of variables in brewing a great cup of coffee, temperature is one of the most important, and the most frequently wrong variable in the process.
The ideal water temperature for coffee brewing is between 195°F - 205°F (92°C - 96°C). Coffee's desirable solubles and aromatic materials will be released more rapidly in this range.
Today I picked up a FANTAST Digital Thermometer from IKEA to use at home. Put the metal probe into your pouring kettle or siphon, and you wont have to worry about an off temperature affecting your brew.
