These adorable elephant-shaped sugar cookies are perfect for any occasion. They are fun to decorate and even more delightful to eat!
Ingredients: 2 1/2 cups all-purpose flour. 1 teaspoon baking powder. 1/2 teaspoon salt. 3/4 cup unsalted butter, softened. 1 cup granulated sugar. 1 large egg. 2 teaspoons vanilla extract. Royal icing assorted colors.
Instructions: In a medium bowl, whisk together flour, baking powder, and salt. In a separate large bowl, cream together butter and sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Divide the dough into two equal portions, shape into discs, and wrap in plastic wrap. Refrigerate for at least 1 hour. Preheat the oven to 350F 175C and line baking sheets with parchment paper. Roll out the chilled dough on a floured surface to about 1/4-inch thickness. Using elephant-shaped cookie cutters, cut out elephant shapes and place them on the prepared baking sheets. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely. Once the cookies are completely cooled, prepare the royal icing in assorted colors. Decorate the elephant cookies using the royal icing, allowing the icing to set before serving or packaging.
