We finally made it to Soba Ichi to try the handmade soba noodles by one of the few soba masters in the world and definitely in the US. The chef, Kochi Ishii, trained in Japan for 3 years and brought a grain mill from Japan to grind his own buckwheat flour from Washington state buckwheat. The noodles sell out every day - so, we arrived 15 minutes before they opened today to make sure we got to try the jyuwari (100% buckwheat) soba noodles.
