A tasty and healthy take on regular enchiladas made with quinoa, black beans, and a mix of other tasty ingredients. Perfect for a healthy meal that fills you up.
Ingredients: 1 cup quinoa, rinsed. 2 cups black beans, cooked. 1 cup corn kernels. 1 cup red bell pepper, diced. 1 cup onion, diced. 2 cloves garlic, minced. 1 tsp cumin. 1 tsp chili powder. 1/2 tsp smoked paprika. Salt and pepper to taste. 2 cups enchilada sauce. 10 small tortillas. 2 cups shredded cheese cheddar or Mexican blend. Fresh cilantro for garnish.
Instructions: Preheat oven to 375F 190C. Cook quinoa according to package instructions. In a large bowl, combine cooked quinoa, black beans, corn, red bell pepper, onion, and garlic. Add cumin, chili powder, smoked paprika, salt, and pepper. Mix well. Spread a thin layer of enchilada sauce on the bottom of a baking dish. Place a generous scoop of the quinoa mixture onto each tortilla, roll, and place seam-side down in the baking dish. Pour the remaining enchilada sauce over the rolled tortillas, ensuring they are all coated. Sprinkle shredded cheese on top. Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly. Garnish with fresh cilantro before serving.
