Entomatadas with Queso Fresco
Vegan Entomatadas
like a non-spicy version of enchiladas
Entomatadas
Entomatadas are a delicious Mexican dish similar to enchiladas but with a tomato-based sauce. This vegan version is stuffed with flavorful black beans and topped with fresh avocado and cilantro.
Ingredients: 2 cups cooked black beans. 1 onion, chopped. 2 cloves garlic, minced. 1 teaspoon ground cumin. 1 teaspoon smoked paprika. Salt and pepper, to taste. 12 corn tortillas. 2 cups tomato sauce. 1/2 cup vegetable broth. 1/2 cup chopped cilantro. 1 avocado, sliced. Pickled jalapeos, for serving.
Instructions: Saute the garlic and onion in a big pan until they are soft. Put in the pepper, salt, cumin, and black beans. Let it cook for five more minutes, and then slightly mash the beans. Warm up the vegetable broth and tomato sauce in a different pan. Wrap the beans in a tortilla and then dip it in the sauce. Put the rolled-up piece seam-side down in a baking dish. Cover the entomatadas with the rest of the sauce. For 15 to 20 minutes, or until hot all the way through, bake at 350F. You can serve it with pickled jalapeos, cilantro, and avocado slices on top.
