Corzetti o Croxetti from Liguria. I have a total obsession with these. The original Ligurian recipe includes wine in the dough. And just because I fancied it and because I didn’t necessarily want to add a sauce, I also added some sage leaves. Their texture and flavour is so satisfying, even on their own with a few drops of good extra virgin olive oil and a sprinkling of Pecorino cheese. My son was responsible for stamping these properly so that the beautiful pattern could be seen.
