Baking has become a fun pastime for me and these cookies have become a favorite in my household.
Ingredients
Please note beforehand that this dough should be chilled for 2 - 4 hours prior to baking.

1 1/2 Cup All-Purpose Flour
1 TSP Salt
1 TSP Baking Soda
1/2 Cup Sugar
1 Cup Light Brown Sugar (packed)
1/2 cup butter
2 Eggs
1 1/2 TPS Vanilla extract
2 TBSP Instant Espresso Powder
3 Cups Semi-Sweet Chocolate chips (2 Bags)
Method
In a large mixing bowl mix the four, salt, baking soda, sugar and light brown sugar.
Melt one bag of chocolate chips with the butter, either on the stovetop or in the microwave. Pour melted chocolate over dry ingredients till the dough is cooled. This is to not scramble the eggs.
Add the 2 eggs, and Vanilla extract. Add remaining bag of chocolate chips. Chill Dough for 2 - 4 hours. Bake for 10 - 12 minutes at 350.
