Okay, so it's canonical that Estinien wasn't one for drinking, historically, until after Heavensward.

He probably isn't very alcohol tolerant. There was that one beverage he took two sips of and passed out from, but we don't know how strong it was—all we know is that it was a newly made Hannish alchemist concoction.

Alphinaud may only be 16, but it is canonical that he drinks. What he drinks and how often isn't explained, but he probably has built a tolerance—not "party animal" tolerance, but still.

I can imagine Alphinaud and Estinien going out for some drinks one evening, and while Estinien orders some ale, Alphinaud gets an insane cocktail that's like a thousand percent alcohol, and the whole time Alphinaud’s happily drinking away, Estinien is sweating.

And Alphinaud leaves the pub like he hadn't even had any alcohol and Estinien is like, "This boy scares me".
