Last step: blanch 1kg of frozen chopped spinach with freshly boiled water. Then squeeze out excess (I used a fine meshed sieve and a slotted cooking spoon). Add to cooking stew base (peppers and meat), bring to boil then simmer for 5 mins only! Any longer and leaves go brown.
