lmao so apparently my new trend is posting one thing a month 😭

anyways. wanted to spoil my mom for mother’s day! mini “dubai chocolate” cheesecakes! chocolate crumb crust, kataifi/pistachio cream mixture, pistachio flavoured cheesecake. topped with a semi-sweet chocolate ganache, chopped strawberries, and crushed pistachio!

strawberry rhubarb. not entirely certain the crust baked all the way through, but seeing as i’ve never made a pie i have no idea. will find out when it’s cooled enough to eat!!

#ramble on exie #exie bakes #to be fair- i did make the crust from scratch. and did use a dough recipe meant for meat pies #it may be a touch thick. maybe needed a little longer at a lower temp?#only one way to know- eat it! and then make my adjustments for next time #i love experimenting in the kitchen #now i need to figure out what to do with the rest of today #i made a pie. i did my laundry. i’ve done dishes and taken out garbage #it is 3pm. perhaps i will go find somewhere to skate #can’t keep watching tv i need outside it’s beautiful out

exie is baking again! finally got some free time today. herbed curd cheese bread in the works!

mildly concerned by the moisture level? the recipe says it would be like a batter. and it is very sticky, too wet to knead, but it also seems drier than expected? oh well, only one way to find out!

made vegetable stock and a guinness soda bread, currently have potato/leek/cabbage soup and rye bread in the works!!

who’s ready for another instalment of exie bakes?! lol it’s my mom’s birthday tomorrow and also mother’s day so i am slaving away over an 18th century-inspired orange cheesecake! so far the crust is done, made out of shortbread cookies that i baked on thursday using a family recipe straight from scotland!

happy happy birthday to my beautiful baby sister!

she’s not big on sweet stuff, so i made her a coffee cake with a sort of tiramisu inspired frosting!

the cake has a coffee essence i made plus some extra coffee flavour, a tiny hint of cocoa, and most importantly not too sweet.

the frosting is mascarpone, whipped cream (with no sugar), a tiny bit of powdered sugar, the remaining coffee essence, and some amaretto and almond extract for a little kick of sweetness

decorated with cafe latte almonds, chocolate covered coffee beans, and dark chocolate curls!
