Ingredients: 1 lb ground beef or ground turkey. 1 small onion, finely chopped. 1 bell pepper, diced. 2 cloves garlic, minced. 1 cup canned pumpkin puree. 1/4 cup tomato paste. 2 tablespoons coconut aminos. 1 tablespoon apple cider vinegar. 1 teaspoon ground cumin. 1/2 teaspoon smoked paprika. 1/2 teaspoon chili powder. Salt and pepper to taste. Lettuce leaves or Paleo-friendly buns for serving.
Instructions: In a large skillet, brown the ground beef or turkey over medium-high heat until fully cooked. Drain any excess fat. Add the chopped onion and bell pepper to the skillet and saut for about 5 minutes until they become tender. Stir in the minced garlic and cook for an additional 30 seconds until fragrant. Reduce the heat to medium-low, and add the canned pumpkin puree, tomato paste, coconut aminos, apple cider vinegar, ground cumin, smoked paprika, chili powder, salt, and pepper. Mix everything well to combine. Simmer the mixture for about 10-15 minutes, allowing the flavors to meld together and the sauce to thicken.
