Ingredients: 2 cups mixed greens. 1 cup roasted butternut squash cubes. 1/2 cup roasted Brussels sprouts. 1/2 cup sliced red onion. 1/4 cup crumbled feta cheese. 1/4 cup chopped pecans. 2 tablespoons olive oil. 1 tablespoon balsamic vinegar. Salt and pepper to taste.
Instructions: Start by heating the oven to 400F 200C. Sprinkle the Brussels sprouts and cubes of butternut squash with salt and pepper. Add 1 tablespoon of olive oil and toss them together. Place them on a baking sheet and roast them for 25 to 30 minutes, or until they are soft and slightly caramelized. To make the dressing, mix the rest of the olive oil and balsamic vinegar in a small bowl with a whisk. Add pepper and salt to taste. The mixed greens, roasted vegetables, sliced red onion, crumbled feta cheese, and chopped pecans should all be put in a large salad bowl.
