With healthy ingredients like farro, fresh vegetables, and herbs, this Mediterranean Farro Salad is both refreshing and good for you. A dressing of sour olive oil and red wine vinegar goes well with it. It's a great light lunch or side dish.
Ingredients: 1 cup farro, cooked and cooled. 1 cup cherry tomatoes, halved. 1 cucumber, diced. 1/2 red onion, thinly sliced. 1/2 cup Kalamata olives, sliced. 1/4 cup fresh parsley, chopped. 1/4 cup fresh mint, chopped. 1/4 cup extra virgin olive oil. 2 tablespoons red wine vinegar. 1 clove garlic, minced. Salt and pepper to taste.
Instructions: The cooked farro, cherry tomatoes, cucumber, red onion, Kalamata olives, parsley, and mint should all be put together in a large bowl. Add the garlic, salt, and pepper to a small bowl and mix the olive oil, red wine vinegar, and pepper with a whisk. Add the dressing to the salad and mix it all together until it's well covered. Put it in the fridge for at least 30 minutes before you serve it so the flavors can mix. Enjoy!
