Rib Tips Dinner - Collard Greens, Cornbread, Texas Toast
Fat Willy’s pretty much exactly met my expectations - not barbecue to write home about, but really well executed and tasty. The collard greens were soft, moist, and flavorful. The cornbread had a nice flavor and wasn’t super moist, but certainly wasn’t dry. The Texas toast was nice and had a spice rub on one side. The star of the meal was the rib tips. They sauce they were basted with worked really well in conjunction with the vinegar-style barbecue sauce on the table (which was good in its own right). They were pretty tender and low in bones, which was nice. Definitely among the better rib tips I’ve had.
