My method for roasting chicken is simple: start with a good bird; clean with lime; rub with well seasoned extra-virgin olive oil on the outside and make sure to also get that good seasoning under the skin; place a few sprigs of thyme in the bird; cook in the oven for 1 hour, 45 minutes at 250°F.
