This Tequila Lime Chicken recipe is a copycat of Applebee's Fiesta Lime Chicken, featuring marinated grilled chicken breasts topped with melted cheese, tomatoes, green onions, and fresh cilantro.
Ingredients: 4 boneless, skinless chicken breasts. 1/4 cup tequila. 1/4 cup lime juice. 2 cloves garlic, minced. 1 tablespoon honey. 1 teaspoon cumin. 1/2 teaspoon chili powder. Salt and pepper to taste. 1 cup shredded Monterey Jack cheese. 1/2 cup diced tomatoes. 1/4 cup sliced green onions. 2 tablespoons chopped fresh cilantro. Lime wedges for garnish.
Instructions: Put honey, cumin, chili powder, salt, and pepper in a bowl. Add the tequila and mix them together. Put chicken breasts in a plastic bag that can be closed again and again, and pour the marinade over them. Put the bag in the fridge for at least 30 minutes and up to 4 hours. Warm the grill up to a medium-high level. Take the chicken out of the marinade and throw away the extra marinade. Chicken should be cooked all the way through after being grilled for 6 to 8 minutes on each side. Put Monterey Jack cheese, diced tomatoes, and sliced green onions on top of each chicken breast in the last few minutes it's on the grill. Put the lid back on the grill to melt the cheese. Take the chicken off the grill and add the chopped cilantro on top. Serve hot with wedges of lime on top.
