These Chicken Fajita Paninis with Fiesta Ranch Sauce are a delicious twist on traditional fajitas. Packed with flavor from tender chicken, sautéed bell peppers, onions, and a zesty Fiesta Ranch Sauce, these paninis are perfect for a quick and satisfying meal.
Ingredients: 2 chicken breasts, thinly sliced. 1 red bell pepper, sliced. 1 green bell pepper, sliced. 1 onion, sliced. 1 tablespoon olive oil. 1 teaspoon chili powder. 1 teaspoon cumin. Salt and pepper to taste. 4 slices of sandwich bread. 1/2 cup shredded cheddar cheese. 1/4 cup ranch dressing. 1 tablespoon taco seasoning. 1 tablespoon chopped cilantro optional.
Instructions: Put olive oil in a pan and heat it over medium-low heat. It will take about 5 to 7 minutes of cooking after adding the sliced chicken breasts until the chicken is no longer pink. Slice the onions and bell peppers and add them to the pan with the chicken. Add salt, pepper, chili powder, and cumin to taste. For about 5 minutes, cook until the vegetables are soft. Add taco seasoning to ranch dressing and mix them together in a small bowl to make Fiesta Ranch Sauce. Warm up a grill pan or panini press. On one side of every piece of bread, spread Fiesta Ranch Sauce. Put some of the chicken and vegetable mix on the other side of the bread. Put crumbled cheddar cheese on top of the chicken and vegetable mix. Place another slice of bread on top, fat side facing down. It will take about 3 to 5 minutes of cooking on the grill pan or panini press until the bread is golden brown and the cheese melts. Take the sandwiches out of the pan or press, cut them in half diagonally, and serve them hot. If you want, you can add chopped cilantro as a garnish.
