This is the huge Walnut tree in a traditional orchard I foster in Devon. I'm going to make Nocino (liqueur de noix), the spicy, sweet Italian liqueur made with green, unripe walnuts. I first tried nocino made by a couple who invited us aboard their house boat while we were rowing through France last summer, it's unlike any liqueur I've tried before, almost medicinal and Christmassy thanks to spices like cinnamon . Our Pet Nat took a trip to Wassail in New York to get some food pairing ideas from sommelier and beverage director Dan Pucci. It's fermented with wild yeasts using the keeving method which gives it earthy, fruity flavours and a soft effervescence. Dan suggests the combination of flavours & texture would be a great contrast to some bright spicy things, like roasted radishes with hard cheese. Hearty strong flavoured fish like blue fish or pike would be great as well and could really hold well against those earthy flavours. We love the suggestions, thank you @danpucci We'll be pouring every last drop of the 2015 Pet Nat at RAW Wine fair London, 12th & 13th March.
