Enjoy the bold and smoky flavors of chipotle chili powder and paprika in this grilled chicken recipe. Perfect for a summer BBQ or any outdoor gathering around the fire pit.
Ingredients: 4 boneless, skinless chicken breasts. 2 tablespoons olive oil. 2 tablespoons soy sauce. 1 tablespoon chipotle chili powder. 1 teaspoon smoked paprika. 1 teaspoon garlic powder. 1/2 teaspoon black pepper. 1/4 teaspoon cayenne pepper optional.
Instructions: Olive oil, soy sauce, garlic powder, black pepper, cayenne pepper if using, and chipotle chili powder should all be mixed together in a bowl. Pour the marinade over the chicken breasts that are in a plastic bag that can be closed again. Close the bag and rub the chicken with the marinade. Put it in the fridge for at least 30 minutes, or better yet, leave it there overnight. Set the grill or fire pit on medium-high heat. Once the grill is hot, take the chicken out of the marinade and put it on it. Throw away the marinade. Grill the chicken for 6 to 8 minutes on each side, or until it reaches 165F 74C inside and is nicely charred and cooked all the way through. Get the chicken off the grill and let it rest for a few minutes. Then serve it. Cut the chicken into pieces and serve it hot with your favorite sides.
