fishcake! another potato-centric UK sandwich!
these are very different from the fishcakes i'm used to. i'm a lot more familiar with gefilte fish and eomuk (<3 u eomuk)
there's a few variations on british fishcake butties, but I made rissole. it was pretty easy - just some quick mashed potatoes, cooked up some fish, made patties, battered, fried. had on a buttered bread roll.
this sandwich very much reminded me of broodje kroket, since the dutch croquettes were pretty similar to the rissoles. long time sandwichheads may remember i wasn't a huge fan of those. but uh. well.
i'd say i liked these a bit better - i took what i didn't like about the broodje krokets and worked to avoid it. i shifted the ratios so it was mostly fish with potato more as a binding agent, battered instead of breadcrumbed (my recipe called for either?), and fried it until it was very crispy.
still not a huge fan of potato on sandwich. i don't know if i ever will be. i understand her - it's very filling and you can do a lot of stuff to add flavor, but it just sits really heavy and the texture leaves so much to be desired. the fish did add an incredible amount. this style was just really good - i think i'd prefer the fishcakes not on bread in the future.
