Pete loves them so in turn I have to eat them. I try and hide them in dishes. This one was great. Courgetti with smoked salmon in a creamy sauce Throw all your greens/veg/anything you have left in the fridge into a pan for 5 mins add the salmon and courgetti last. For the sauce X2 teaspoons of coconut cream 1/2 an avocado A glug of extra virgin olive oil Salt (Himalayan if possible) Pepper and chilli flakes Smoosh together with a fork until smooth. Add it into the pan, heat through. Eat :) 8 min lunch or dinner! Easy peasy.
