I often cope with anxiety and stress by cooking. So I did last night. I've breaded chicken w/ Flamin' Hot Cheetos & Doritos before so wanted to try the Funyuns version. And figured, let's do some cacio e pepe w/ it. - Chicken: Sliced chicken breasts hasselback style. Seasoned w/ salt/pepper/red pepper flakes. Put in bowl of buttermilk/ranch dressing/horseradish/garlic/chives & let sit overnight. Removed next day & breaded w/ Funyuns mix. Stuck in freezer to set for about 30. Fried each piece for a few minutes & then put on baking sheet & stuck in hot oven for 20. - Funyun mix: Crushed bag of Flaming Hot Funyuns/regular funyuns & put in bag. Added cornstarch/red pepper flakes/paprika/cayenne & mixed well. - Cacio e pepe: Did a bit non-traditional. Roasted fresh ground black pepper in oil. Added minced garlic. Then pasta water from cooked spaghetti & some butter. Stirred up well & added spaghetti in & kept stirring. Added in pecorino-romano cheese & continuously stirred. Added more black pepper & then sprinkled in some shredded mozzarella cheese & stirred til it was motherfuckin' perfect! Garnished w/ freshly chopped parsley. - Sauce: I wanted some sort of sweet creamy sauce to balance all the heat in the chicken. Mixed sour cream/maple syrup/dijon mustard/salt/pepper/whiskey. Goddamn it was tasty. - Garlic knots: I bought some frozen ones & heated them up. I'm a genius. - Result: The Funyun mix didn't stick as well as I wanted which is why I both fried/baked it. But it came out crunchy/deelish! Pasta was super duper cheesy & yummers. Yeah I said yummers. What of it? Will def try this again but alter bits here & there to make it work better.
