The warmth of bourbon whiskey and the rich flavors of Guinness stout come together in these homemade marshmallows. Ideal for enjoying as a sweet treat on their own or adding a distinctive twist to your hot chocolate.
Ingredients: 1 cup Guinness stout. 3 tablespoons unflavored gelatin. 2 cups granulated sugar. 1/2 cup light corn syrup. 1/4 cup bourbon whiskey. 1/4 cup powdered sugar. 1/4 cup cornstarch.
Instructions: Transfer the Guinness into a small saucepan and set it over medium heat, allowing it to simmer. Let it settle to a half-cup. Put aside to cool. Combine the gelatin and half a cup of cold water in a different bowl. Give it five to ten minutes to bloom. The reduced Guinness, corn syrup, and granulated sugar should all be combined in a large saucepan. Stirring constantly, heat over medium-high heat until the sugar dissolves. After the ingredients are dissolved, cease stirring and let the mixture cool until the candy thermometer reads 240F 115C. In another saucepan, slowly reheat the bourbon while the sugar mixture is heating. When slightly warm but not boiling, remove from heat. Take the sugar mixture off the heat source when it reaches 240F 115C and gently stir in the bloomed gelatin until it dissolves completely. Stirring continuously, slowly pour the warm bourbon into the sugar-gelatin mixture. For 8 to 10 minutes, or until the mixture gets thick and fluffy, beat the mixture on high speed with an electric mixer. Combine the cornstarch and powdered sugar in a different bowl. Lightly dust a 9 x 9 inch 23 x 23 cm baking pan with the mixture of powdered sugar. Using a spatula to smooth the top, pour the marshmallow mixture into the pan that has been prepared. Allow the marshmallows to cure for at least four hours, or over night, at room temperature. After the marshmallows are set, cut them into the desired shapes with a knife or cookie cutters coated with the powdered sugar mixture. To keep the marshmallow pieces from sticking, toss them in the remaining powdered sugar mixture. Savor your homemade marshmallows with Guinness and Bourbon!
