Ingredients: 1 cup rolled oats. 1 cup buttermilk. 1/2 cup all-purpose flour. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 egg. 2 tablespoons melted butter. 1 teaspoon vanilla extract.
Instructions: Put rolled oats and buttermilk in a bowl and mix them together. Let the oats get soft by leaving it alone for 15 minutes. Mix the flour, sugar, baking powder, baking soda, and salt in a different bowl using a whisk. Mix the oats with the egg, melted butter, and vanilla extract. Combine well. Slowly add the dry ingredients to the wet ones while stirring just until everything is combined. Watch out not to mix too much; it's okay to have some lumps. Put a nonstick griddle or skillet over medium-high heat and use cooking spray or butter to lightly coat it. Add 1/4 cup of the pancake batter at a time to the hot griddle. Once the top starts to bubble, flip it over and cook the other side until it's golden brown. Do the same thing again with the rest of the batter.
