Beer Bread

Hilary says: I love this bread! It's the easiest, yummiest, buttery-est bread ever. It has a crunchy biscuity crust. I realized a bit too late that I don't actually own a loaf pan, so I put it in a muffin tin, and it worked out just fine (reduced temp  and cooking time). Calls for 12 oz can, which works out to 355 ml of beer. 

Ingredients:

3  cups  flour (sifted)             

3  teaspoons  baking powder (omit if using Self-Rising Flour)

1  teaspoon  salt (omit if using Self-Rising Flour)

1⁄4 cup  sugar

1 (12  ounce) can beer

1⁄2 cup melted butter (1/4 cup will do just fine)

Easy Cinammon Rolls

Sarah says: My first time ever making them from something other then the can at the grocery store and they turned out pretty good! It was also my first time using yeast *double whammy* so I was prettified they wouldn't rise but it worked!

Ingredients:

2 and 3/4 cups (345g) all-purpose flour

3 Tablespoons granulated sugar

1 teaspoon salt

1 package Red Star Platinum Yeast or any instant yeast (1 packet = 2 and 1/4 teaspoons)

1/2 cup (120ml) water

1/4 cup (60ml) milk (cow's milk - I used skim)

2 and 1/2 Tablespoons (40g) unsalted butter

1 large egg

3 Tablespoons (45g) unsalted butter, softened to room temperature

1 and 1/2 Tablespoons ground cinnamon

1/4 cup (50g) granulated sugar

1 cup (120g) powdered (confectioners') sugar

1 teaspoon vanilla extract

2 Tablespoons (30ml) strong coffee (or use milk/cream instead)

French Toast Roll-Ups

Hannah says: We made for breakfast today they were so so good!!! I used Nutella.

Jackie says: We've done them too. Nutella in some and cream cheese in some, and alternated strawberries and bananas. I had students make them one year in foods with just cream cheese and they were awesome.

Ingredients:

8 slices white sandwich bread

softened cream cheese, diced strawberries, or Nutella

2 eggs

3 tablespoons milk

1/3 cup granulated sugar

1 heaping teaspoon ground cinnamon

butter, for greasing the pan
