Delicious vegan crepes filled with a spiced apple pie filling, perfect for a healthy breakfast or dessert. These crepes are suitable for Weight Watchers Freestyle program.
Ingredients: 1 cup whole wheat flour. 1 1/2 cups unsweetened almond milk. 1 tbsp maple syrup. 1/2 tsp vanilla extract. 1/2 tsp ground cinnamon. 1/4 tsp ground nutmeg. 2 medium apples, thinly sliced. 1/4 cup water. 1 tbsp lemon juice. 1 tbsp cornstarch. 1 tbsp coconut sugar. Cooking spray.
Instructions: Use a whisk to mix the flour, almond milk, maple syrup, vanilla extract, cinnamon, and nutmeg in a bowl. This will make the crepe batter. Put a nonstick skillet on medium heat and spray it with cooking spray. Pour 1/4 cup of batter into the pan and swirl it around to cover the bottom evenly. Take it out of the oven and flip it over. Cook for another minute or two. Make 8 crepes with the rest of the batter. Put apples, water, lemon juice, cornstarch, and coconut sugar in a saucepan. Over medium heat, stir the mixture every now and then for about 5 to 7 minutes, or until the apples are soft and the mixture has thickened. Spread the apple mix on each crepe, fold them in half, and serve. Have fun!
