Ingredients: 4 cups fresh green beans, trimmed. 1 gallon water. 1/4 cup salt.
Instructions: Bring a large pot of water to a boil. Blanch the green beans in the boiling water for 2-3 minutes, until they are bright green and slightly tender. Prepare an ice bath by filling a large bowl with ice and water. Transfer the blanched green beans to the ice bath to cool rapidly and stop the cooking process. Once cooled, drain the green beans thoroughly. Spread the green beans on a baking sheet in a single layer to prevent them from sticking together. Place the baking sheet in the freezer and freeze the green beans for 2 hours or until they are solid. Transfer the frozen green beans to airtight freezer bags, remove excess air, and seal tightly. Label the bags with the date and store them in the freezer. Frozen green beans can be stored for up to 12 months.
