Donut Macarons combine the elegance of French macarons with the fun shape of donuts. These sweet treats are perfect for special occasions or a delightful indulgence.
Ingredients: 2 cups almond flour. 2 cups powdered sugar. 4 large egg whites. 1/4 cup granulated sugar. 1/2 tsp vanilla extract. 1/4 tsp salt. 1/4 cup unsalted butter. 1 cup powdered sugar for filling. 2 tbsp milk for filling. Food coloring optional.
Instructions: Preheat your oven to 300F 150C and line a baking sheet with parchment paper. In a food processor, combine almond flour and powdered sugar. Pulse until finely combined. Sieve this mixture into a large mixing bowl. In a separate bowl, beat egg whites until foamy. Gradually add granulated sugar, vanilla extract, and salt. Continue beating until stiff peaks form. Gently fold the egg white mixture into the almond flour mixture. Be careful not to overmix. If desired, add food coloring at this stage. Transfer the macaron batter into a piping bag and pipe small donut-shaped circles onto the prepared baking sheet. Bake for about 15-18 minutes until the macarons have formed a smooth, firm top. Let them cool completely on the baking sheet. While the macarons cool, prepare the filling. Beat the unsalted butter until creamy, then add powdered sugar and milk. Mix until smooth. Once the macarons are cool, pipe the filling onto the flat side of half the macarons and top with the other half to create macaron sandwiches. Enjoy your delicious Donut Macarons!
