These apple pancakes are a delightful twist on traditional pancakes. They are made with fresh diced apples and a hint of cinnamon, making them a perfect breakfast treat.
Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1 teaspoon ground cinnamon. 1/2 cup milk. 1/2 cup applesauce. 1 egg. 1 cup diced apples. 2 tablespoons melted butter. Maple syrup for serving.
Instructions: In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, and ground cinnamon. In another bowl, whisk together the milk, applesauce, and egg. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; lumps are okay. Fold in the diced apples and melted butter into the batter. Heat a non-stick griddle or frying pan over medium heat and lightly grease it with cooking spray or butter. Pour 1/4 cup portions of batter onto the griddle for each pancake.
