Ingredients: 6 hard-boiled eggs, chopped. 1/4 cup mayonnaise. 2 tablespoons Dijon mustard. 1/4 cup finely chopped red onion. 1/4 cup diced dill pickles. 2 tablespoons chopped fresh dill. Salt and pepper to taste.
Instructions: In a large bowl, combine the chopped hard-boiled eggs, mayonnaise, and Dijon mustard. Add the finely chopped red onion, diced dill pickles, and chopped fresh dill to the bowl. Instructions: Take the pits out of the avocados and cut them in half. Then, scoop the flesh into a bowl. Mash the avocados with a fork until they reach the consistency you want. To the bowl, add the chopped onion, tomato, jalapeo, lime juice, and cilantro. Combine well by mixing. Add pepper and salt to taste. If you need to, add more lime juice or seasoning. Serve right away with low-carb chips or veggie sticks that are keto-friendly.
