Ingredients: 4 cups fresh fruit e.g., berries, mango, pineapple. 1 cup unsweetened coconut milk. 1 tablespoon lemon juice.
Instructions: Blend the fresh fruit until smooth. Add coconut milk and lemon juice to the blended fruit, and mix well. Pour the mixture into popsicle molds. Insert sticks and freeze for at least 4 hours, or until solid. To remove the popsicles from the molds, run them under warm water for a few seconds.
