Improve your hummus game with this layered dip, influenced by Greek cuisine. It's a great snack or the ideal occasion for get-togethers and parties. With each bite, the layers of fresh vegetables, tart Greek yogurt, and creamy hummus create a burst of Mediterranean flavors.
Ingredients: 2 cans 15 oz each of chickpeas, drained and rinsed. 1/2 cup tahini. 1/4 cup fresh lemon juice. 2 cloves garlic, minced. 2 tablespoons olive oil. 1 teaspoon ground cumin. Salt and pepper to taste. 1 cup Greek yogurt. 1 cup cucumber, finely diced. 1 cup cherry tomatoes, halved. 1/2 cup Kalamata olives, pitted and sliced. 1/2 cup red onion, finely chopped. 1/4 cup feta cheese, crumbled. 2 tablespoons fresh parsley, chopped. 1 tablespoon fresh dill, chopped. Pita bread or chips for serving.
Instructions: Add the chickpeas, tahini, lemon juice, garlic that has been minced, olive oil, ground cumin, salt, and pepper to a food processor. If you need to, add a little water to get the consistency you want. Blend until smooth and creamy. The first layer is the hummus mixture that you spread out evenly on the bottom of a serving dish or platter. The second layer is made by putting the Greek yogurt on top of the hummus. Put down a layer of diced cucumber, then a layer of cherry tomatoes cut in half. For the fifth layer, sprinkle the sliced Kalamata olives on top of the tomatoes. The next step is to add a layer of chopped red onion. Cracked feta cheese, chopped fresh parsley, and chopped fresh dill should be added on top of the dip for layers six and seven. You can dip chips or pita bread in the Greek Layered Hummus Dip. Have fun!
