Ingredients: 1/2 cup fresh strawberries, chopped. 1/2 cup fresh blueberries. 1/2 cup Greek yogurt. 1/4 cup coconut milk. 1 tablespoon honey or maple syrup.
Instructions: In a blender, blend the strawberries with a bit of honey or maple syrup until smooth. Set aside. Rinse the blender and blend the blueberries with honey or maple syrup until smooth. Set aside. In a small bowl, mix Greek yogurt, coconut milk, and honey or maple syrup until well combined. Layer the strawberry puree, yogurt mixture, and blueberry puree into popsicle molds, alternating colors. Insert popsicle sticks and freeze for at least 4 hours or until completely frozen. Once frozen, run warm water over the molds to release the popsicles. Enjoy!
