These low carb sushi rolls are packed with fresh vegetables, creamy avocado, and savory smoked salmon, offering a delicious and healthy alternative to traditional sushi. The rice vinegar dipping sauce adds a tangy kick to each bite.
Ingredients: 4 sheets nori seaweed. 1 large cucumber, julienned. 1 large carrot, julienned. 1 avocado, sliced. 4 oz smoked salmon. 1/4 cup rice vinegar. 2 tbsp soy sauce. 1 tsp sesame oil. 1/2 tsp wasabi paste. 1/4 tsp ginger, grated.
Instructions: On a sushi rolling mat, put a piece of nori. Put a thin layer of carrot and cucumber strips on top of the nori. Stack smoked salmon and avocado slices on top of the lettuce. Use the sushi mat to roll the nori up tightly, and use a little water to seal the edge. Do it again with the rest of the nori and fillings. Put rice vinegar, soy sauce, sesame oil, wasabi paste, and grated ginger in a small bowl. Mix these together to make a dipping sauce. Cut the sushi rolls into small pieces that you can easily eat. Toss the food with the sauce and enjoy!
