These Banana Cupcakes with Cream Cheese Frosting are a delightful treat for banana lovers. They are moist, flavorful, and topped with a creamy frosting that complements the sweetness of the cupcakes perfectly.
Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 teaspoons baking soda. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large ripe bananas, mashed. 2 large eggs. 1 teaspoon vanilla extract. 1/2 cup buttermilk. For Cream Cheese Frosting:. 8 oz cream cheese, softened. 1/2 cup unsalted butter, softened. 4 cups powdered sugar. 1 teaspoon vanilla extract.
Instructions: Start by heating the oven to 350F 175C. You can line a cupcake tin with paper liners. Mix the flour, baking soda, and salt together in a medium-sized bowl using a whisk. In a different large bowl, beat the sugar and softened butter together until the mixture is light and fluffy. Add the eggs, vanilla extract, and mashed bananas and mix them in well. Mix the dry ingredients in slowly, adding buttermilk in between each addition. Start with the dry ingredients and end with the buttermilk. Don't mix any further than that. Fill each cupcake liner about two thirds of the way to the top with batter. In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. Take the cupcakes out of the oven and let them cool in the pan for a few minutes. Then, move them to a wire rack to finish cooling. To make the cream cheese frosting, put the softened cream cheese and butter in a large bowl and beat them together until the frosting is smooth and creamy. Slowly add the powdered sugar and vanilla extract while beating the mixture until it is well mixed and fluffy. Put the cream cheese frosting on top of the cupcakes after they are completely cool. You can pipe or spread it on. If you want, you can add chopped nuts or sliced bananas as a garnish. Have fun with your tasty Cream Cheese Frosted Banana Cupcakes!
