Pickled Peaches and Blueberries for Blueberry and Peach Day!

These pickled peaches and blueberries are the recipe I’ll be teaching at my next Freedom Farmers Market food preservation workshop. They’re sweet, sour, spiced, and fantastical.

Fruit Pickles!

For this recipe, we did a modified version of Summer Fruits by Alton Brown.  Instead of his fruit selection, though, we used what we had on hand.

Namely:

Granny Smith Apples

Gala Apples

Chocolate Persimmons

And instead of the citrus and ginger we used:

mint (one stalk per 8 oz jar)

rosemary (a tiny bit!)

We still used his same proportions of 1 to 1 to 1 for the water, sugar and vinegar.  However, we didn't have rice vinegar, so we used apple cider vinegar.  We figured it would work with the apples and give a little fruitiness.  Plus, we have like two gallons of apple cider vinegar, so yeah.  If you've got it....

The recipe suggests that you wait two weeks before eating, but who has that kind of discipline?  After four days they were delicious!  The only thing I would do differently would be not using gala apples.  They were just a little too soft to pickle well.  But then, maybe that was just the particular piece in my test batch!

I think I'm going to start making my own pickles and selling them at the Farmer's Market

The problem is, I have no canning supplies. Damn.

I don't think I'm going to try cucumber pickles because those are too common.

I'm thinking onion, green bean, beet, carrot, apple, and cherry pickles.
