Plums are naturally covered with various microorganisms like yeast and molds. The natural waxy exterior of plums (any many other various fruits) protect the outer layers of the fruit that reduce the permeability of the skin to the fruits' to outside forces. Here, the Nordic Food Lab cooks/scientists dip plums in multiple layers of beeswax at approx 3 degrees Celsius (the melting temp of beeswax) to further enhance the wax coatings of plums and see what would happen to the plums after they fermented for a period of time.
