Later tonight a lunar eclipse (well, when I wake up tomorrow morning) - the perfect excuse to literally POP open this beer! A couple years ago I experienced this Paix Dieu Triple (then named Abbaye Cistercienne Paix Dieu) as boozy to the point that nothing else mattered (safe to say I wasn’t impressed), but this more recent brew (from August 2018) left me with more enjoyable thoughts of balanced fruits grain, citrus and alcohol- can I today simply handle the booze better, or was the beer better balanced? Perhaps both...!?
