Chocolate Peanute Butter No-Bake Lactation Cookies (with vegan-friendly modifications)
Ingredients:
1/2 c. butter or margerine
1 1/2 c. sugar
1/2 c. milk (I have made these with almond milk also)
4 Tablespoons unsweetened cocoa
1/2 c. peanut butter
1 1/2 tsp. vanilla
1/2 c. chopped almonds
3 c. quick oats (I use steel cut, but you can use regular as well)
1/8 c. whole ground flaxseed meal

Directions:
In a sauce pan, combine butter, sugar, milk, and cocoa. Bring to a rolling boil, allow to boil for 1 minute and remove from heat. Stir in peanut butter and vanilla until smooth. Stir in almonds, oats, and flax. Drop spoonfuls onto cookie sheet and place in fridge to cool and set. The recipe yields around 2 dozen cookies depending on what size you make them.
I have heard from people that there are some issues getting these to set; I've made them a lot and still occasionally have some trouble. The key is your boiling time. If your cookies are wet and won't set up, boil the cocoa mixture longer. If they're dry and crumbly, shorten the boiling time. But most of the time they should set well.
I've had pretty good success with these even though they don't include the brewer's yeast (almonds and almond milk are also galactogogues, foods that encourage the production of milk, and the yeast can have a rather unpleasant aftertaste so I prefer the almonds), they taste awesome, and they take just a few minutes to whip up. For more milk-boosting you can add a teaspoon of blackstrap molasses, coconut flakes, or brewers yeast to the mixture.
