Ingredients: 1 1/4 cups gluten-free all-purpose flour. 1/2 teaspoon salt. 1/2 cup cold unsalted butter, cubed. 1/4 cup ice water. 1 cup cherry tomatoes, halved. 2 cups mixed greens such as spinach, kale, or arugula. 1/4 cup crumbled feta cheese. 2 tablespoons olive oil. 1 tablespoon balsamic vinegar. Salt and pepper to taste. 1 egg, beaten for egg wash.
Instructions: Preheat the oven to 375F 190C. In a food processor, pulse the flour and salt until combined. Add the cold cubed butter and pulse until the mixture resembles coarse crumbs. Gradually add the ice water, 1 tablespoon at a time, pulsing until the dough comes together. Transfer the dough to a floured surface and shape it into a disk. Wrap in plastic wrap and refrigerate for 30 minutes. On a lightly floured surface, roll out the dough into a circle about 12 inches in diameter. Transfer the rolled-out dough to a parchment-lined baking sheet. In a bowl, toss the cherry tomatoes and mixed greens with olive oil, balsamic vinegar, salt, and pepper. Arrange the tomato and greens mixture in the center of the dough, leaving a border around the edges. Sprinkle the crumbled feta cheese over the tomatoes and greens. Fold the edges of the dough over the filling, pleating as needed. Brush the edges of the dough with the beaten egg wash.
