Collard greens soup with home baked ham and stilton. I make this soup a lot because there’s always strange greens in the veg box and sometimes I just don’t fancy them sautéed with garlic and lemon or with a stir fry, so this is an easy way to eat them up. Take an onion and the ends of celery stalks, perhaps the broccoli stalks too and sauté with butter (or olive oil) until softened, add a tsp lazy garlic or a chopped garlic clove and stir for a few minutes. Add in the centre core of the greens where it’s tougher and if you wanted to, the stalks from the centre of each leaf. Continue to cook until starting to colour. Add stock (I’ve used beef stock in this particular batch and think it gives a better flavour) and season well, simmer for 20-30 minutes until the veg are really soft, then add the leaves and cook for a further 6-8 mins until wilted. Leave to cool slightly before blending. I blend in batches to get a smoother consistency with this soup. Also great with a generous dollop of pesto in the middle, or sauerkraut sprinkled on top.
