Ingredients: 1 whole chicken, organic. 2 carrots, chopped. 2 celery stalks, chopped. 1 onion, diced. 3 cloves garlic, minced. 1 tablespoon olive oil. 8 cups water. 1 teaspoon salt. 1/2 teaspoon black pepper. 1 teaspoon dried thyme. 1 bay leaf.
Instructions: In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, saut until softened. Place whole chicken in the pot, add water, carrots, celery, salt, black pepper, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for 2 hours, skimming off any foam that rises to the surface. Remove the chicken, shred the meat, and return it to the pot.
