Sadly, I didn't find anything solid. Apparently pointy hats have a long, long history of being worn pretty much everywhere, so I guess there's a lot of places the hats could have come from. I think I need to start diving into scholarly journals to try and find a better answer.
(By the way, I think my favorite non-serious answer is this, where the hat is actually a shrunken cone of a sturdy material which, upon contact with an anti-magic field, will lose its size enchantment and fall on top of the wizard, shielding them from the anti-magic.)
