Ingredients: 2 cups fresh or frozen cherries. 1/2 cup maple syrup. 1/4 cup water. 1 tsp fresh ginger, minced. 1/2 tsp ground cinnamon. 1/2 tsp vanilla extract. Pinch of salt. 2 tsp cornstarch or gluten-free alternative dissolved in 2 tbsp cold water.
Instructions: In a saucepan, combine cherries, maple syrup, water, minced ginger, ground cinnamon, vanilla extract, and a pinch of salt. Bring the mixture to a boil over medium-high heat, stirring occasionally. Reduce the heat to low and let it simmer for about 10-15 minutes, until the cherries are soft and the mixture thickens slightly. In a small bowl, dissolve cornstarch in cold water to create a slurry. Slowly pour the cornstarch slurry into the cherry mixture, stirring continuously. Continue to cook for an additional 2-3 minutes, or until the glaze thickens to your desired consistency.
