This bacon-wrapped meatloaf is a delicious twist on a classic comfort food. The brown sugar ketchup glaze adds a sweet and tangy flavor that complements the savory beef and smoky bacon perfectly.
Ingredients: 1 lb ground beef. 1/2 cup breadcrumbs. 1/4 cup milk. 1 egg. 1/2 onion, finely chopped. 2 cloves garlic, minced. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 8 slices bacon. 1/4 cup ketchup. 2 tablespoons brown sugar. 1 tablespoon Worcestershire sauce.
Instructions: Preheat oven to 350F 175C. In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, salt, and black pepper. Mix until well combined. Shape the meat mixture into a loaf shape. Wrap the loaf with bacon slices, securing them with toothpicks if needed. In a small bowl, mix together ketchup, brown sugar, and Worcestershire sauce to make the glaze. Brush the glaze over the bacon-wrapped meatloaf. Place the meatloaf on a baking sheet lined with parchment paper. Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 160F 70C. Once cooked, let the meatloaf rest for a few minutes before slicing. Serve slices of the bacon-wrapped meatloaf with extra glaze on the side.
