Ingredients: 2 medium zucchinis, sliced lengthwise. 1 cup fresh or frozen corn kernels. 1 cup cherry tomatoes, halved. 1/4 cup red onion, thinly sliced. 2 tablespoons olive oil. 2 tablespoons balsamic vinegar. 1 teaspoon honey or alternative sweetener. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Warm up the grill over medium-high heat. Salt and pepper should be mixed with honey, olive oil, balsamic vinegar, and pepper in a small bowl. Put the zucchini slices on the grill and brush them with olive oil. Cook for two to three minutes on each side, or until they have grill marks and are soft. Take them off the grill and let them cool down a bit. Put the grilled zucchini, corn kernels, cherry tomatoes, and red onion in a large bowl. Pour the dressing over the salad and toss it around gently to cover everything. Add some fresh basil leaves as a garnish. Serve right away as a tasty and healthy summer salad!
