if, let's say, you are a kintype who is usually known to shapeshift a lot, then would everything you shapeshift into also be a kintype?

Not for most people.
A kintype is something you identify as. If you shapeshift into a cow, do you identify as a cow, or are you still the shapeshifting creature that just looks like a cow for a while? If it's the former, then that might be a kintype - personally, if it disappears as soon as you're out of the shapeshift, I wouldn't consider it a kintype, but I can see why you might, and that really comes down to your personal feelings on the subject.
